Eggs really are incredible!
Everything inside the shell of an egg is about food! Designed to keep a growing chick safe and fed, both the white and the yolk are rich, healthy sources of good protein and fat. Your family needs both for a strong immune system and good growth.
To get the best out of your eggs, choose pasture fed chickens and check the use-by date. What you’re looking for is a bright, sunny yellow yolk – that tells you that it comes from a healthy outdoor chicken.
So, what’s in an egg?
The egg white, knows as albumen, is the protein power-house. It’s full of minerals and B vitamins (good for brain and mood). It also has a super-power: when beaten with a whisk, albumen catches air and turns into foam, getting bigger! Used properly, stiffly-beaten egg whites are the base for mousse, soufflés, airy sponge cakes and even puffy omelettes.
The yolk of an egg is a golden treasure-trove of natural fat, a host of vitamins and some vital minerals. Why do we even need fat? Without it, your body cannot process some vitamins at all – and where better to get it than from the bright yolk of a free-range egg? Egg yolks have their own magic trick: if whisked with the right ingredients, they change into wonderful things like mayonnaise and hollandaise sauce! Use eggs to make this simple recipe with the kids.
Scrambled eggs
You’ll need a pan, a wire whisk, a wooden spoon and a mixing bowl.
Ingredients:
In her nesting box, a mother hen will turn her egg about 50 times each day to stop the yolk from sticking to the shell.
Different kinds of chickens lay different coloured eggs! You can get brown, white, pink and even green or blue eggs!
